What is a matzah s’mores, you ask? It’s exactly what it sounds like: s’mores, hold the graham cracker, throw in a piece of matzah.
But why, you also ask? Because Passover is a deeply desperate time, that’s why. And because I accidentally ordered a bulk shipment of marshmallows.
But also because they—the s’mores—do actually taste GOOD. Not, like, who-needs-graham-crackers-this-is-a-total-revelation good, but, like, surprisingly-good-for-a-Passover-dessert-and-I-might-even-momentarily-consider-having-seconds-before-reconsidering, good. Especially if you slather on a bunch of caramel and sprinkle with sea salt. Helps a lot in the edibility department.
Here are a few tips for putting together one of these boards:
Don’t feel limited by the typical s’mores fixings.
Marshmallows and chocolate are nice, but what about M&Ms and chocolate kisses and macaroons? Banana slices would be fun, too. Or strawberries. Or really any other sweet things you’ve got in your pantry and fridge.
A few different types of chocolate—and marshmallows of various sizes—will make the whole thing more fun to look at.
When it’s not just one chocolate brand and a smattering of similarly-sized marshmallows, things tend to look more celebratory. Don’t ask me why. That’s just the mysterious science of cute stuff. And keeping it cute is a good idea, because you’re serving something that might raise a few (curious and intrigued!) eyebrows. If you can at least present it beautifully, they’ll be so busy ooh-ing and aah-ing that they might just forget about the lack of real graham crackers.
I’m no snob, and my general rule is “you do you,” but if you hand your guests a bag of KFP marshmallows, a box of matzah, and a lighter…well. You’re asking for a different kind of eyebrow raise.
Toasting the marshmallows is a good (necessary?) idea.
For more on that, I’m going to pass the mic to this lovely and insightful blogger in an attempt to absolve myself of any liability here. (Please don’t burn your house down.) Personally, I just use a kitchen torch, though I’ve been known to make indoor s’mores over my gas burner too. Anything goes—just be very careful. Extra very careful if you have kids.
Add chocolate-covered matzah or matzah toffee!
In the top left there, you can see I dipped some matzah pieces into melted white chocolate and added sprinkles, then let the chocolate set before placing them on the board. But you could also go with some matzah toffee. Or you could just grab some store-bought chocolate-covered matzah.
The caramel is a must-try.
Really. Just take my word for it and remember to slather on a bunch of caramel sauce and sea salt. *Chef’s kiss.* Highly recommend.
