I’m so excited to be sharing another brand-new Leah Koenig recipe with you all today. These pretty, apple butter-filled cookies are such a fun idea for the High Holidays, and they’re surprisingly soft, too, unlike most shortbread recipes out there. You can also use a store-bought apple butter for the filling, so they come together quickly.
For those who aren’t familiar with Leah or her work here on the blog, she’s the author of six cookbooks, including The Jewish Cookbook, Modern Jewish Cooking, and The Little Book of Jewish Sweets.
