Ricotta-Honey Apple Toast for Rosh Hashanah

Description

An easy Rosh Hashanah breakfast idea that both grown-ups and kids will appreciate. Couldn’t be simpler.


Ingredients

  • 46 slices bread (any kind), toasted
  • 1 cup whole milk ricotta
  • 1/3 cup strawberry jam (or fruit jam of your choice)
  • Handful chocolate sprinkles
  • A few sprigs of fresh mint
  • Honey, to drizzle as a garnish
  • Flaky salt, to taste

Instructions

  1. Top each slice of toasted bread with the ricotta.
  2. Use a demitasse/coffee spoon or other small spoon to create small circles of jam on top of your ricotta “canvas.” These will be the base of your apple shapes! (I went in with a toothpick afterwards to create the slight “dip” at the top of each circle—I felt like that gave them more of an apple-like appearance.)
  3. Add a single chocolate sprinkle on top of each one to serve as the “stem.” 
  4. Use a paring knife to slice a single sprig of mint into a few miniature leaf shapes, as pictured; add one to each of the apples, branching out from the sprinkle stem at a diagonal.
  5. Garnish with a drizzle of honey (try to garnish from a distance with a light hand so as not to mess up your apple shapes!). Add a sprinkle of flaky salt if desired.
